Review of the gin infused dinner @Usagi

Dinner with a Japanese touch

A few days ago we had implemented the first Gin infused dinner at Usagi in Munich. A great event with a top-class crew. Together with Christoph Kunz, in the kitchen, Felix Kammerer, in the service, and Philipp Jüngling, as the main host, I, Peter Jauch, was allowed to implement the evening as an experience for the guests. The guests were served a matching cocktail for each of the 6 courses. In total, there were 7 cocktails, which the almost 40 guests enjoyed. The Usagi, with a Japanese food concept, was sold out. We had done the announcement purely through social media and within 3 days we were full.

Christoph is currently the chef at Usagi. He, who previously cooked 2-star in Munich, makes his stop at the best Japanese in Munich, depending on when and where he will continue his star path. On September 15, he cooked great:

GREENS FROM FOREST AND MEADOW/MISODRESSING

accompanied by a gin and tonic with KI NO BI and Aqua Monaco Tonic Water

SCHLIERSEE FISH/PICKLED/SALT LEMON

accompanied by a lemon gimlet with Josef GIN from Schliersee

ORIGINAL VEGETABLES BRAISED/ GINGER/ HORENSO GOMAE

dazu ein Ingwer-Clover Club Twist mit ROKU GIN

*

HIRAMASA KRAGEN/ SOJASCHAUM/ BONITO

plus a Paloma Twist with the new Pink Grapefruit Limo from Aqua Monaco and

KI NO BI Sei

*

THICK BEEF RIB/CIPOTLE BBQ/ SHOE STRING FRIES / TOGARASHI

plus a lime gin sour twist with Beefeater 24

*

PEAR / CRUMBLE / TEA

served with a pear gimlet with KI NO TEA

As a welcome drink we had a small Negroni, after all the international Negroni-Week was running and we didn’t want to exclude our guests from it. 🙂 In total, almost 300 cocktails went over the counter that evening. It was a great evening. A BIG THANK YOU to Philipp Jüngling and Felix Kammerer, the good souls of Usagi Munich.
